Variable Capacity tanks are 'always full' due to the separate pneumatically sealed inner lid which can be set at any height within the tank;
during fermentation it is set about 2 inches above the liquid surface, at other times the lid is lowered to rest on the liquid.

The pneumatic sealing tube is pumped up (to 0.5 Bar) with a small hand pump rather like a bicycle tyre pump.
When the sealing tubes are new they are a very tight fit, difficult to stretch around the lid. With use they stretch gradually and become progressively easier to fit.

Replacement pneumatic sealing tubes:-

Note: the sizes are for the outside diameter of the lid, not the internal diameter of the tank.
